Xevi Miró
Xevi was born in Girona. He studied journalism and has worked and continues to work in media-related jobs: analog and web. He really likes music and good food and drink, but this cheese thing has been with him for many years. He loves cheese, always has. His favorites are usually blue and aged cheeses. He also likes tupí and other strange and powerful cheeses, such as casín. (Ask him about them.) Xevi loves to talk, discuss, and even argue about food, drink and anything in-between. He has lived in Sants for more than 25 years, with some brief stays in other cities (Madrid and Mexico City).

María Carroll
Maria is technically from Madrid but speaks Spanish with a good Poughkeepsie, NY accent. When she was small, her mother used to say Maria was like a mouse because she really liked cheese. That’s still true, but now the appreciation is more complex. Her favorites are soft cheeses such as Époisses or Brie de Meaux but Manchego, Cheddar, and Stilton are also frequently found in her home fridge. Maria loves to spend time in nature, usually places where good cheese is made. Before opening the cheese shop, Maria studied international relations and worked in embassies, consultancies and one political party. She is very interested in social and environmental issues. In addition to the United States, she has lived in Belfast, Madrid, and Vienna. Maria has lived in Sants for more than 15 years.
Our mission
Llet Crua is a cheese store specializing in artisan cheeses from Catalonia, Spain and the rest of Europe. We really like cheeses, and we think it’s a product that turns out better if produced on a small scale. That’s why we spend our free time looking for small producers from everywhere that make their cheeses with the same passion with which we eat them.
Cheeses that are made with raw milk tend to taste better and retain more properties of milk and of what the animal has eaten, so whenever we can, we opt for this type of cheese. But we are not extremists of any cause and if a cheese is artisan, it is good and it is pasteurized, we would also like to offer it to our customers.
But we are not fundamentalists at all and if a cheese is good and is pasteurized, we also love it.
